- 1 lb ground beef
- 1 onion, diced
- 3 cups macaroni, cooked
- 1 (10.75 oz) can cheddar cheese soup
- 1 (10.75 oz) can cream of mushroom soup
- 1 cup sour cream
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions:
Preheat oven to 350°F. In a large skillet, cook the ground beef and onion over medium-high heat until the beef is browned and the onion is soft, about 8 minutes. Drain the fat.
Meanwhile, cook the macaroni according to the package directions. In a medium bowl, whisk together the cheddar cheese soup, cream of mushroom soup, sour cream, milk, garlic powder, Italian seasoning, salt and pepper. Add the cooked macaroni and cooked beef/onion and stir until combined.
Pour the mixture into a 9×13 baking dish and top with the shredded cheese, if desired. Bake for 25-30 minutes, until the casserole is bubbly and the cheese is melted. Let sit for 5-10 minutes before serving.

- 1 (15 oz) can black beans, drained and rinsed
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin

- 1 (8 oz) package shredded Mexican cheese blend
Instructions:
Preheat oven to 350°F. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken, enchilada sauce, green chiles, corn, black beans, chili powder, cumin, salt and pepper and stir until combined. Cook for 2-3 minutes, until heated through.
Spread the chicken mixture into a 9×13 baking dish. Top with the shredded cheese. Bake for 20-25 minutes, until the cheese is melted and bubbly. Let cool for 5-10 minutes before serving.

- 1 lb ground beef

- 1 (1.25 oz) package taco seasoning
- 1 (10 oz) can diced tomatoes and green chiles
- 1 (15 oz) can black beans, drained and rinsed
- 1/2 cup frozen corn
- 1 (8 oz) package shredded Mexican cheese blend
- 1/2 cup salsa
- 2 cups tortilla chips, crushed
Instructions:
Preheat oven to 350°F. In a large skillet, cook the ground beef and onion over medium-high heat until the beef is browned and the onion is soft, about 8 minutes. Drain the fat.
Add the taco seasoning, diced tomatoes and green chiles, black beans, corn and 1/2 cup of the cheese to the beef/onion mixture and stir until combined. Pour the mixture into a 9×13 baking dish and top with the remaining cheese, salsa and crushed tortilla chips.
Bake for 25-30 minutes, until the casserole is bubbly and the cheese is melted. Let sit for 5-10 minutes before serving.
